Arborio rice is characterized by very large, full-bodied grains with an extended central pearl, capable of dispensing just the right amount of starch to make risottos delicately creamy. Its grains stay shelled, absorb flavors and bind perfectly with different ingredients. Riserva Gallo Arborio undergoes stone husking, as per tradition, to respect all the organoleptic and nutritional qualities of the grain. A process recognizable by the slightly amber color of the grain.
