Lasagna is one of the oldest known formats. Probably corresponding to the Latin 'Lagana' (itself derived from the Greek 'laganon': large, flat sheet of pasta cut into strips), the format began to be known as 'Lasagna' after 1000 AD.
The first traces of its wide diffusion as 'Lasagna' can be found in the writings of the most famous Italian poets of the 12th century. 'Granel di pepe vince / per virtù la lasagna' quotes Jacopone da Todi. Cecco Angiolieri, on the other hand, admonishes his readers: 'he who makes lasagne from other people's flour / his castle has neither wall nor ditch'. Always one of the best-known and most popular formats in Italian cuisine, the most widespread and simplest recipe calls for ragù (meat sauce), béchamel sauce and Parmesan cheese as seasoning, while mozzarella cheese has recently been introduced.
