WINEMAKING AND REFINING
The harvest takes place in September and the grapes are picked
by hand in the early morning in order to preserve their characteristic aromatic qualities. In the winery, destemming takes place and the harvested grapes undergo a temperature chilling process that precedes a maceration phase in the press. This is followed by a cycle of soft pressing and the resulting must is cold decanted. Alcoholic fermentation is then initiated in temperature-controlled stainless steel tanks. After alcoholic fermentation, the wine is racked and kept in contact with the fine lees until the preparation for bottling begins. After bottling, the wine ages for two to three months in bottle before release.
In the goblet it has a beautiful and delicate soft pink color. The aromas are fresh and complex and refer to fruity and floral notes with a subtle mineral note that enriches the bouquet. In the mouth it shows a good structure in which the alcoholic components are perfectly balanced by the wine's great freshness and sapidity. The finish is long and consistent with a pleasant closure that refers back to the aromatic notes perceived on the nose.
A versatile wine in pairing that will be a suave accompaniment to both seafood and meat dishes, such as a busiata with eggplant and swordfish or a plate of fettuccine pasta topped with porcini mushrooms.
