VINIFICATION AND AGING
This wine is made from the pure vinification of Carricante grapes. Harvesting generally takes place in October and is done by hand with the bunches placed in boxes. Particularly low yields make it possible to obtain an excellent raw material from which the vinification and maturation process starts in steel at a controlled temperature. After fermentation, the wine is matured on fine lees that allow it to expand its bouquet and structure, giving us unique and typical notes
of this variety. It is bottled after about a year from the harvest, as it needs more maturation before it can express its pronounced characteristics.
The wine presents itself in the glass with a straw-yellow color with light golden highlights. The notes are characteristic, fresh and elegant with a particular dominance of mineral sensations. The olfactory picture is broad and iridescent, intriguing and naturally imbued with subtle spicy sensations. In the mouth it reveals its full soul, it is rich and warm, masterfully balanced by great acidity and minerality that expresses unique sensations of the grape variety. The structure is balanced and the aromatic persistence slowly brings one back to the great complexity perceived on the nose.
The recommended pairing is with traditional Sicilian dishes: sarde beccaficu, grilled fish and native cured meats and cheeses.
