VINIFICATION AND AGING
This wine is made from a blend of the two ancient Nerello varieties (Mascalese and Cappuccio also known as Mantellato). The grapes are harvested
by hand and placed in crates to avoid crushing the berries. Upon receipt at the winery, the bunches are destemmed followed by gentle crushing. Alcoholic fermentation is conducted in steel at a temperature of 24-28° C with a long stay of the wine in contact with the skins. Subsequently, the wine matures in second- and third-passage barriques for about 14 months, which is followed by a period of aging in the bottle as a prelude to marketing.

ORGANOLEPTIC CHARACTERISTICS
The wine presents itself in the glass with a light ruby red color, typical of the varieties from which it is made. The bouquet is particularly rich and elegant with notes of red fruit reminiscent of wild strawberries and raspberries, surrounded by floral hints of violets that are enriched by subtle and pleasant spicy and toasted scents reminiscent of walnut husk, cinnamon, nutmeg, tobacco leaves and cocoa beans. The particularly broad
and varied olfactory framework gives great opulence to the taste, which reveals a warm and structured wine, very elegant, with ripe tannins and a typical minerality. The finish reveals great balance and persistence that slowly fades leaving a very pleasant aromatic return that takes us back to the notes perceived on the nose.
